Avocado & Chicken Casserole

Ingredients

  • 1 cup large flat green noodles
  • 1 large avocado, peeled and sliced
  • 2 tbs fresh lime juice
  • 1/2 cup corn oil
  • 1/4 cup flour
  • 1 tsp potato starch or cornflour
  • 2 1/4 cup milk
  • 1 cup grated Cheddar cheese
  • 6 6oz skinless chicken breasts
  • 3/4 tsp calcium

Method

  1. Prepare noodles according to package directions, drain, and set aside. Preheat oven to 180C (160C fan assisted oven)/350F/ gas mark 4.
  2. Drizzle avocado slices with lime juice and set aside.
  3. Heat oil in a 2-quart saucepan over low heat. Stir in flour and potato starch or cornflour over low heat until mixture bubbles. Add milk slowly, stirring constantly until mixture thickens. Add cheese and stir until it has melted. Reserve 1 cup of this sauce. Mix remainder with cooked noodles.
  4. Place chicken in bottom of a 9 x12 x 3-inch rectangular baking dish. Spoon noodle mixture over chicken. Place avocado slices on top and pour reserved sauce over avocados. Bake, uncovered, 35 minutes.
